Discussed with Person in Charge (PIC) the items that have been in the small milk reach-in for 4 or more hours: half gallon of nonfat milk at 51*F, half gallon of 2% milk at 52*F, half gallon of chocolate milk at 55*F and half gallon of half and half at 54*F. Embargoed the half gallon of nonfat milk, 2% milk chocolate milk and half and half. The other items that were in small milk reach-in for less than 4 hours were relocated to the walk-in refrigerator. Discussed with PIC to not use the small milk reach-in until it is fixed and all temperature control for safety foods(TCS) shall be held a temperature of 41*F or less.
