Observed oxtail soup prepared on 9/20/2023 in walk in cooler with a temperature of 49*F-56*F. Cold hold of food to be at 41*F or lower. As per the kitchen staff the soup was placed in walk in cooler the day before to cool. Observed beans in large 5 gallon container in walk in cooler at 44*F - 46*F. As per the kitchen staff the beans were prepared the day before, partially cooled in walk in freezer, and placed in walk in cooler to finish cooling the evening before.
