Observed cooked chicken in hotel pan on stove being hot held. Calibrated thermometer with person in charge (PIC). Internal temperature measured 103°F. Discussed proper hot holding procedures. PIC instructed staff to reheat chicken to 165°F and move to hot holding unit. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
