All raw animal proteins shall be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw shelled eggs according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Per person in charge (PIC), one-gallon milk containers were received and immediately stored inside walk-in cooler the day prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All one-gallon milk containers improperly cold held were embargoed and recommended for discard at time of inspection. Corrective Action: Corrected at time of inspection.

Establishment is continuing to open and repackage golden fish for retail and is currently a class 2 retail permit. Establishment has gone beyond the scope of the permit. Class 2 retail permits are not permitted to repackage retail foods for sale. Establishment shall either increase class to a class 3 retail permit or discontinue sale of repackaged foods. In addition, an installation of hand sink and three compartment sink would be required to become a class 3 permit. Currently establishment does not have a three compartment sink or hand washing sink.
