-- In walk-in refrigerator, observed case of raw beef stored above case of yogurt, raw ground beef roll above packages of raw pork loins on sheet rack, and case of raw chicken above precooked packages of whole deli turkey. No visible contamination observed. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

#51 — Plumbing Installed; Proper Backflow DevicesCore5-205.15

Inspector's notes

AVB on secondary water line for chemical dispenser is leaking when subjected to pressure. AVBs are not designed to be subjected to constant pressure, and it may no longer be functioning correctly. AVB is not required at this water line as the chemical dispenser has it's own backflow prevention device inside. AVB should be repaired or more advisably removed from this section. If backflow redundancy is desired, a continuous pressure vacuum breaker would be suggested. Please also verify backflow device in chemical dispenser is ASSE 1055 with large airgap rather than the model with small vents which can become clogged. Cover will need to be removed to verify. Corrective Action: Correct prior to next routine inspection.
