Inspector's notes

In the pull-out drawers of the refrigerator at the south end of the cookline: Shell-off hard-cooked eggs -- 54°F to 58°F and portioned cooked rice pilaf 58°F. These were discarded; see embargo. Drawers holding at 58°F; other sections of the unit holding at 41°F or less. Drawers were taken out of service pending repair. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Employee in the cook line area cracked shell eggs then went to handle clean equipment without washing hands. Employees were asked to wash hands when changing tasks. Ensure that employees wash hands after engaging in activities that may contaminate hands. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and a verification breakdown which resulted in the violation. PIC discarded all items-see embargo form. Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of the unit was 48F. PIC removed all TCS items from the unit and stated that the unit would be scheduled for maintenance/repair. Establishment has sufficient refrigeration. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff and a verification breakdown which resulted in the violation.
