Observed menudo at 51°F in large pot inside walk-in cooler (10/14). Person in Charge (PIC) stated that the menudo was cooked and placed into the walk-in cooler to begin cooling on 10/13. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection. PIC had pot of menudo embargoed. Discussed cooling procedures for large amounts of TCS food.
