Observed several items marked for discard 1 to 2 days past 7 days the item was prepared. Staff adjusted dates to read the proper discard date for 7 days (date prepared plus 6 days). For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. ----- A container of cooked diced chicken and a container of shredded cheese observed without a date mark while being cold held inside the make-line unit next to steam well. It was determined that the chicken was prepared on Sunday (2 days prior) and the shredded cheese was also portioned on Sunday. Person in charge placed adjusted date marks on both containers. Date marking shall be done within 24hrs of preparing or opening RTE TCS food. Listeria is the pathogen of concern. RTE/TCS can be kept for a max of 7 days when held at 41*F or less.
