Observed a couple of dishes that were stored as clean at the clean dishes rack according to the person in charge. Upon separation, bits of food debris and other food residues were observed to be stuck on the inside of the containers. The containers in question were moved to the sink to be washed, rinsed and sanitized at time of inspection. All food-contact surfaces must be cleaned to sight and touch. Person in charge had the refrigerator repaired and now has sufficient cold holding capacities. Time and temperature controlled for safety foods in the refrigerator such as milk had an internal temperature as measured using a probe thermometer of 40°F. A min-max thermometer was placed into the unit to measure ambient air temperature and was allowed to stabilize for 10 minutes. The ambient air temperature was holding at 41°F.

Inspector's notes

Observed chopped corn and whole cobs of corn with internal temperatures as measured using a probe thermometer of 49°F- 51°F inside of the main refrigerator. It was observed that the entire fan assembly above was completely frozen over and the fans were frozen in place. According to the person in charge (PIC), the corn had just been received today as well as sealed bags of cream that were also in the refrigerator and were in there for less than 2 hours. The PIC moved the corn and the bags of cream to alternative refrigeration. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
