Observed soup at 110F, and 115F inside the soup warmers. As per manager, product had been there for 20 minutes. Reheated up to 165F during service. Ensure that all hot holding of TCS foods are kept at 135F and above.

Observed a can opener and two separate mixers with visible food debris up underneath and on the guard. Discussed with PIC removing the guards and cleaning mixers thoroughly to avoid contamination and food particles falling off into the next food that is mixed. Also discussed cleaning can opener every time it is used or when it is visibly dirty.

Observed two soups, broccoli cheddar and tomato at 125*F and 112*F. Soups had been in crocks for an hour. Had PIC reheat soups on the stove to 165*F. Discussed with PIC their reheating procedures. Remove product from walk in and reheat to 135*F within two hours. Discussed placing soups directly into crocks to ensure 135*F is reached within two hours. Corrective Action: Corrected at time of inspection.
