Observed employee pick up a can of cream off of the floor, discard can, then continue to prepare beverages, without washing hands. Employee washed hands after instructed to do so. Discussed the importance of washing hands after contamination and prior to handling clean utensils, food etc. in order to prevent the transfer of pathogens. Any activity which may contaminate the hands must be followed by thorough handwashing in accordance with the procedures outlined in the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the cold brew, cooling in the tap cooler, with an internal temperature of 54F. According to PIC, the cold brew was stored overnight in the walk-in cooler at 41F or below. Just prior to inspection, the cold brew was taken out of the walk-in, room-temp water was added to dilute, then the cold brew (covered large/deep container) was placed into the tap cooler. PIC placed the cold brew back into the walk-in to rapidly cool to 41F or less. Discussed diluting the cold brew and cooling to 41F prior to moving it to the tap cooler, or adding ice to quickly cool it. The tap cooler is designed to maintain cold temperatures, not reduce the temperature. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
