Also observed raw fish (salmon, tuna), and raw tuna mixes in sushi display cooler at 45-48*F. Unit measured at 46*F at time of inspection with calibrated thermometer. Per sushi chef, sushi had been in cooler for less than 4 hours, and was moved to alternate cooler at time of inspection. Reviewed monitoring of TCS foods, proper filling of reach-in coolers, as well as proper cooling methods of wrapped, raw fish. Ensure all TCS foods are kept at 41*F or below.
