Observed pinto beans in a container with a date mark from May 6th (over a month ago). Person in charge (PIC) states they are unsure when the pinto beans are from. Informed PIC that all RTE/TCS foods should be used within 7 days (with prep day being day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Sliced chicken in prep top cooler was date marked 3/25, person in charge said that was the date it was frozen and it was thawed today. Portion bag dates were adjusted for thaw date at time. Please ensure food items are date marked accurately to be discarded 6 days after the date that they have been prepared or removed from packaging (if frozen: freezing and thawing dates both count as one day.
