Observed sanitizer bucket with a chlorine concentration of 10ppm and murky water. Informed PIC that the sanitizer concentration is too low, the water is dirty and needs to be remade. PIC remade sanitizer bucket with the proper concentration (50-100ppm or per manufacturer's label) for wiping clothes to be stored. Reviewed the establishment's sanitizing routine with PIC suggested more frequent monitoring of sanitizer buckets. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection. Observed three wet wiping clothes sitting on the food preparation counter tops.
