No County legal action will result from this inspection.1. Observed the chemical dispenser at the three-compartment sink dispensing a concentration of quat that is greater than 500 ppm. No food contact surfaces were being actively sanitized. Discussed with PIC that the dispenser needs to be adjusted so that the concentration being dispensed is within the approved range (200-400ppm). Discussed adding water to the sanitizer compartment to dilute the concentration when they are sanitizing and testing with their test strips. 2. New test strips need to be obtained, as the current ones are expired, which will be inaccurate if used. 3. Discussed with staff that hairnets are not specifically required for food service, only an effective hair restraint (hat or hair tie is sufficient).

No Certified Food Protection Manager was available onsite at time of inspection. Informed PIC that there needs to be at least one person with a Food Protection Manager Certificate onsite during time of inspection. PIC stated that they are in the process of scheduling their exam. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation.
