Please follow up with your Plan Reviewer for an inspection. Of note: reviewed variance documentation requirements for 4th generation F'real frozen dessert machine. Machine was not operational during inspection. Logs must be maintained that verify that the f’REAL blender undergoes automatic cleaning and sanitization using the submitted and approved process once every 24hrs and a manually cleaning and sanitizing using the submitted and approved process once every 7 days. High Temperature sanitization will be verified weekly by heat sensitive indicators, which will be maintained with the weekly logs. These logs must be retained on premises for at least 90 days.

Observed floor tiles to be cracked, missing, or otherwise in disrepair directly outside the freezer door in the retail area rendering the area neither smooth, nor easily cleanable. Discussed entering a work order to have the cracks sealed with water-resistant epoxy or other appropriate sealant with PIC. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
