****2nd Consecutive Violation*** Observed a heavy accumulation of grease on two hood vents located in the grill station area. Discussed cleaning frequency with PIC. Establishment should be cleaned frequently enough to prevent the accumulation of organic matter, dust, and food debris. Corrective Action: Correct prior to next routine inspection 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: ***2nd Consecutive Violation**** Observed numerous broken floor tiles and grout (near frying station and hot holding units) around the establishment at the time of inspection. Observed a hose with a sprayer attached in the mop sink with an atmospheric vacuum breaker on mop sink fixture. Advised the PIC the hose w/ sprayer attached to the faucet with this type of backflow prevention device is prohibited (due to constant pressure). PIC took the hose off the faucet and says it will only be attached when in use. Corrective Action: Corrected at time of inspection.

Observed cut tomatoes and shredded lettuce at 48*F in the top of the make-line unit. Ambient temperature was 52.3*F using min/max thermometer. Per the person in charge the items were placed in the unit yesterday. Corrected at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Priority Foundation-6-301.12, Pf: Hand Drying Provision. -- No paper towels (or other drying device) at the handwashing sinks in the back of the kitchen area and in the toilet room. Per person in charge, napkins had been delivered instead of paper towels in their order. Napkins were placed at the handwashing sinks for hand drying until towels are obtained. ** Provisions must be provided for hand drying so that employees will not dry their hands on their clothing or other unclean materials. It is known that wet hands transfer bacteria more readily than dry hands. The residual moisture found on the hands after washing allows for bacterial and viral transfer to food or solid surfaces by touch.
