Per person in charge (PIC), sanitizer from dispenser is not accurately pulling and there is an open work order to repair it. Alternate sanitizing methods are available on-site. **Reviewed proper handwashing procedure with PIC and employees.
Inspector's notes
Observed handsink next to dish machine without paper towels and with a large sponge blocking basin drain. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Sponge was removed and paper towels were provided at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed more than 20 drain flies flying around the back area of the establishment. Observed rodent feces inside the wall opening in the back of the establishment. Informed PIC that the pest problem needs to be eliminated by being serviced by a certified pest control applicator prior to re-inspection. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection on 01/27/2025.

Discussed that quat sanitizer concentration should be maintained between 150-400 ppm (per manufacturer’s instructions) and verified with a chemical test strip. Reviewed three compartment setup and sanitizer testing with PIC. PIC placed a work order on the dispenser and stated all dishes would be cleaned in the dishwasher until repairs are completed.
