Observed buttercream based frostings such as cookie dough, cookies and cream, fudge, and pink sugar with an internal temperature of 67*F. According to PIC, frostings were removed from a temperature controlled environment 2 hours prior to inspection. Discussed importance of provided proper documentation to ensure food is discarded within 4 hours. All frostings that contain dairy based ingredients must be stored under refrigeration at 41*f and below or must be documented with a discard time when using time as a control.

Observed several boxes of butter dated 10/1, 10/5 and 10/9 with an internal temperature of 73*F stored at room temperature. Boxes received on same day as inspection (10/9), were moved to upright reach in cooler with an internal temperature of 48*f at time of inspection. It was observed that there is insufficient space to be able to refrigerate all boxes of butter at once, and establishment is actively storing all the butter at room temperature until needed. Please consider purchasing separate cold storage unit to ensure butter is maintained at or below 41*F while not in use, or consider moving non- TCS foods out of refrigeration to ensure TCS foods are cold held.

According to PIC, pumkin frosting was removed from a temperature controlled environment 4 hours prior to inspection and was discarded at time of inspection. Caramel Apple frosting was time stamped at time of inspection. All frostings that contain cream cheese as the base ingredient must be stored under refrigeration at 41*f and below or must be documented with a discard time when using time as a control.
