Bare hand contact is not approved with ready-to-eat (RTE) food items. Predefined Comment: RTE food that was contacted by bare hands was discarded by PIC at time of inspection. Observed house made aioli/70°F, cooked brine pickled cucumber + onion/71°F on the counter. Observed garlic and oil mix/101°F and mushroom stock/85°F between the burners of the grill. On a speed rack near the grill observed raw beef bone/65°F, ratatouille/75°F, and quiche/72°F held at room temperature. According to the chef items are discarded within 4 hours of being removed from temperature control. No time stamps or written policy available for review at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Must provide written time as a control procedures prior to re-inspection (3/19/2026).
