Observed vegetable soup in large plastic container in walk-in refrigerator with a preparation date marked for 10/7/2025. Same soup was actively prepped and hot held for upcoming meal service. Several other items throughout kitchen observed with 8 day date markings. Person in charge discarded of soup, replaced with soup prepared that morning, and changed date on improperly dated items. Inspector's notes

Observed containers of cut tomatoes, shredded cheese, and cooked sausage with internal temperature range of 46-55*F while cooling in the walk-in cooler. Lids were tightly shut for all 3 containers. All items were within proper cooling parameters, per PIC. The ambient temperature of the walk-in cooler was 36*F at time of inspection. PIC left container lids slightly ajar and internal temperatures were later observed at 44-46*F and dropping. Discussed importance of air circulation during the cooling process.
