Observed right side and left side make drawers holding TCS foods such as raw beef, cubed chicken mini tacos, mini taquitos, cubed potatoes, raw eggs holding between 47-50*f degrees. All items had been restocked throughout the shift. All items moved to walk-in to cool at time of inspection. Front of house salsa fridge found holding green and red salsa's at 45-47*f degrees. Salsa moved to walk-in to cool. Corrective Action: Corrected at time of inspection.

Observed a large pot of cooked shredded beef with vegetables cooling in a large deep pot the walk-in with an internal temperature of 47*f degrees. Person in charge (PIC) stated item had been placed to cool in walk-in at 9 am. Item was savable and moved to a sheet pan to finish cooling. All items undergoing cooling must be done with a method that expedites the process. and achieve 70*f degrees in 2 hours and 41* degrees in 4 hours, this brings the whole cooling process to 6 hours.
