Inspector's notes

Observed milk requiring refrigeration at 51*F held inside refrigerator. Per staff on site, the milk was stocked prior to shift starting >3 hours prior. Temperature logs on site indicated that refrigerator has been >41*F for at least 3 days prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Staff voluntarily embargoed the milk. Staff was given instruction on not restocking refrigerator with milk or any temperature-controlled foods until cooling capacity is restored to the unit. Corrective Action: Corrected at time of inspection.

Inspector's notes

Milk and water refrigerator observed to be holding with an internal ambient temperature of 49-51*F. Per temperature log on site, it appears the unit has been >41*F as of at least 3 days prior. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Spoke with manager on site and discussed ensuring that no TCS items are to be put into the fridge until the unit is serviced.
