Inspector's notes
Observed commercially packaged corn (44*F), black beans (45*F), marinated garbanzo beans (44*F) and pico de gallo (45*F) at salad prep table. Cold hold of foods to be 41*F or lower. As per the person in charge items were temperature checked at approximately 8:00am and at 41*F or lower. Items were placed in walk in cooler to chill back to 41*F. Advised person in charge to use metal stem thermometer to verify foods are remaining at 41*F or lower while refrigerated. Corrective Action: Corrected at time of inspection.
