Inspector's notes
Observed fish in small prep cooler by grill at 43.7*F. Cold hold of food to be 41*F or lower. Observed that the refrigeration unit may have been on defrost. Max min thermometer showed 41*F ambient temperature inside. Provided option to place in freezer to cool back to 41*F, or discard product. Manager decided to discard fish at time of inspection. Advised staff to verify cold hold temperatures throughout the day with a metal stem thermometer. Corrective Action: Corrected at time of inspection. Observed raw commercially portioned beef in walk in cooler at 44*F. All other foods around observed at 39-42*F. Beef placed in freezer to cool back to 41*F. Corrective Action: Corrected at time of inspection.

Observed ambient internal temperature of walk in cooler at 42-44*F at beginning of inspection, internal temperature increased to 47*F while on side. Repair company was contacted and on site at time of inspection and repaired. Freon was added to walk in cooler and air circulating in unit was observed to be between 38 - 40*F. Corrective Action: Corrected at time of inspection.

Observed diced tomatoes (48*F), Pico de Gallo (54*F) and guacamole (54*F) in small prep cooler across from grill. Containers were marked with todays date and a prep time of 6:00am, out of temperature for more than 4 hours. : Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Advised staff to stir items and to loosely cover containers and place in walk in cooler to cool after preparing. Corrective Action: Corrected at time of inspection. All three items were embargoed and discarded
