Observed TCS foods in 3-door stand up fridge and in prep fridge have internal temperatures above 41*F. TCS food in the prep fridge include crema (66*F), cut tomato (61*F), mozzarella cheese (54*F), ham (67*F), chorizo (65*F), hot dogs (67*F), cooked carnitas (70*F), raw in shell eggs (64*F). PIC stated ham and chorizo were bought in the morning at 12:30pm and carnitas cooked at 11am. Ham, chorizo, and carnitas from the prep fridge were moved to the chest freezer to rapidly cool at time of inspection. TCS items in 3-door stand up fridge include cooked beans (57*F), cooked beef made yesterday and today (51-57*F), crema (54*F), hominy (50*F), raw beef (50-53*F), raw pork (54*F), caldo de pollo (52*F), and shredded mozzarella and cheddar cheese (62*F). PIC stated shredded cheese, raw pork, and crema were bought today at 12:30pm and were moved to the freezer to rapidly cool. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held for 4 hours or more were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding.==== Observed chopped lettuce and cheese in front reach in with an internal temp of 48F on probe thermometer. Notified PIC(Person in charge). PIC informed inspector items were placed 2 hours prior. PIC placed lettuce in ice bath and moved cheese to main reach in unit so that proper temps were reached. Except during preparation, cooking, cooling, or when time is used as a control; all TCS food shall be maintained at 41°F or less.
