Observed Drainage Pipes from Ware washing station and Drainage Pipe in the back mop sink with an air-break where an air-gap is required. Informed PIC that all drainage pipes need a 1in air-gap to prevent backflow. Corrective Action: Correct prior to next routine inspection.

PIC stated that they are in the process of obtaining their certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation.
