Inspector's notes

Observed debris build up on the racks used for fried chicken and potato wedge in the hot holding unit. Food was not placed in the unit prior to inspection. PIC stated that the racks are to be washed, rinsed, and sanitized at the end of every day. Informed PIC that all food contact surfaces must be kept clean to sight and touch. Instructed wash, rinse, and sanitize the racks so that they are clean to sight and touch. Discussed with PIC about speaking with staff about keeping food contact surfaces clean to sight and touch. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

The section lead indicated it was a "go back" raw chicken and he stored it there to start the go back process. Discussed with section lead that all raw animal proteins must be stored below/away from and ready to eat foods to prevent contamination of the ready to eat foods. The raw chicken was removed from the case. Correct By: Corrected At Time Of Inspection

Section lead was unable to answer to what internal temperature they were reheated. Section lead indicated these foods were just placed in the case. Person in charge instructed them to reheat the macaroni and cheese and mashed potatoes to at least 145*F before putting it back in the warmer. These foods were reheated to an observed 150*F for the macaroni and cheese and the mashed potatoes to 122*F. Discussed with section lead and person in charge reheating and maintaining any food that is taken from a commercially processed, hermetically sealed container or intact package to 135*F for hot holding. Person in charge willingly discarded the mashed potatoes and said they would retrain staff concerning hot holding and reheating. Correct By: Corrected At Time Of Inspection
