Observed shredded lettuce, tomato, deli ham and salami and American cheese cold holding at internal temperature of 46-50 deg F in a reach in unit that was holding >41 deg F. Manager discarded these food items during inspection and reach in unit returned to within specification during inspection also. Corrective Action: Corrected at time of inspection.

Observed cut tomatoes under a time as a control policy with a sticker indicating the tomatoes were taken out of temperature over 4 hours prior to inspection. Per PIC, the pan of tomatoes has been out for less than 4 hours. The time sticker was not changed when the new pan came out. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.
