Observed cheese enchilada prep, shredded cheese blend (cheddar and jack) and shredded lettuce cold holding in a cold drawer under the grill that was holding >41 deg F. Observed single service milk cold holding at internal temperature of 46 deg F in the front cold unit in the service line that was holding >41 deg F. Manager informed this food items had been cold holding in the units a short period of time and placed in walk in for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed the cold drawer under the grill holding temperature at 49.8 deg F and the front reach in unit holding temperature at 51.4 deg F (according to the min/max thermometer). All TCS food items were directed to walk in unit. Currently there is no TCS food cold holding in unit. Manager has called for repair. Corrective Action: Corrected at time of inspection.

Observed organic matter build up on the customer self service fountain soda machine. All food-contact surfaces must be cleaned to sight and touch. PIC also stated they clean the iced tea dispensers about twice a week. Except when dry cleaning methods are used (4-603.11), surfaces of utensils and equipment contacting food that is not TCS food shall be cleaned at least every 24 hours for iced tea dispensers. All items should be cooled in uncovered, shallow pans in the back reach-in refrigerator, by using an ice bath, or another effective means.
