Inspector's notes

Observed foods (Cut tomatoes, cheese, hummus, baba ganoush, chicken etc) in the cold holding reach-in cooler across from cook station with internal temperatures between 42*F-46*F using probe thermometer. Temperature logs show foods in proper temperature at last check. Person in charge (PIC) stated the lids were up during the lunch rush. PIC moved foods to walk-in cooler to rapidly cool and replaced with containers that were proper temperature at time of inspection. PIC will continue to log temperatures. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed a first aid supply cabinet above drinks. Also observed first aid and a cleaner above dry storage beans. Person in charge (PIC) moved the cleaner and first aid at time of inspection. PIC will find a more permanent storage solution going forward. All first aid and chemicals must be stored away from food, utensils, and single service items to prevent contamination.
