Meat employee walked directly into department to begin working with raw goat for a customer order directly contacting meat slicing apparatus. Employee was stopped immediately and educated on proper wash rinse and sanitize procedures. Employee washed all food contact surfaces at time of inspection. Predefined Comment: All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing.

Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Observed meat department employee cleaning raw chicken cutting board at 3-comp sink without use of sanitizer. Employee put cutting board away as clean. Cutting board inspected and raw chicken particles and slime found on clean contact surfaces. Observed saw type meat cutting apparatus with wiped down and cleaned by employee at time of inspection. No sanitizer was used and meat particles found throughout surfaces and crevices of machine. PIC stated that machine is dissembled once per day for a deep clean. Discussed that machine needs to be cleaned every 4 hours when in use to prevent build up of bacteria at room temperature. Both items washed rinse and sanitized at time of inspection. Corrective Action: Corrected at time of inspection.
