Observed three pans of breaded Chicken at out at room temperature at 80 Degrees. Manager said the pans where out two hours. All three pans were transferred to walk in cooler to rapidly cool at time of inspection.

Cooked rice with an internal temperature of 125 degrees F stored in a metal pan on a shelf under the rice cooker. PIC states that the rice was cooked (20 minutes prior to inspectors arrival) and then stored on the shelf for holding until it is reheated per order. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Knife stored between prep table and stainless steel table in the kitchen. PIC placed the knife in ware washing area to be cleaned. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food.
