Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

Trained staff on using ice bath technique to expedite cooling process and ensure ice bath in contacting product completely. Items were put into a correct cooling process at time of inspection. Both of the products still were frozen solid in the middle, while the surrounding liquid was 108F. The PIC indicated that the products were placed in the unit for less than 30 minutes. TCS food reheated to 165°F for 15 seconds and shall be done rapidly (does not exceed 2 hours). The PIC place the dishes in large pots to be reheated to 165F.
