-- In reach-in refrigerator, observed breakfast burritos containing bacon, egg, cheese, and potatoes with internal temperatures ranging from 92°F-96°F. The person in charge stated the burritos were prepared approximately 3.5 hours prior to the inspection (prepared around 8:30 AM). All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Reviewed approved cooling methods (place items in unit that allows for rapid cooling such as walk-in refrigerator/freezer). Corrective Action: Corrected at time of inspection.

Reviewed HSP requirements: in facilities serving a highly susceptible population, raw shell eggs may only be used for hard boiling or as an ingredient in baking mix for shelf-stable products such as cakes, muffins, brownies, etc. Advised due to the current egg shortage, unpasteurized eggs can be used, but must be fully cooked. The PIC stated the unpasteurized eggs will be fully cooked and also used for baking purposes.
