Per Person in Charge (PIC) the pork belly was cooked 3 hours prior to inspection. PIC took the bagged pork belly and spread out on sheet tray and put in the freezer to rapidly cool. Discussed with PIC the importance of foods shall be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours Correct By: Corrected At Time Of Inspection
