PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. On counter, inspector observed a raw egg wash probed with an internal temperature of 63 degree F. (staff took this egg wash out from the refrigerator to baste the bakery in between). Staff returned egg wash to refrigerator upon instruction. Out on sale floor, inspector observed water melon juice, honey dew juice, cantaloop juice togo were probed with an internal temperature of 46-48 degree F. (juice were not properly insulated with ice bath). All juice had returned to walk in cooler to bring down temperature to 41 degree F per instruction of PiC.
