In the meat market walk in cooler observed raw duck and raw chicken being stored above raw pork. In the meat display case, observed packaged raw duck being stored above raw pork. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed stained cutting boards with deep grooves. Upon asking PIC how often the cutting boards were replaced, they said he did not know they had to be replaced, and they hadn't replaced them before. All equipment must be maintained in good repair at all times. Additionally, all food-contact surfaces must be smooth, non-absorbent, and easily cleanable. PIC agreed to order new ones as soon as possible. Corrective Action: Correct prior to next routine inspection.

Observed pressurized spray nozzles attached to hoses directly connected to potable water faucet with an atmospheric vacuum breaker. PIC confirmed the nozzle and hose were in place at all times. Instructed PIC to remove spray nozzles when hoses were not in use in order to prevent damage to the backflow device or install an approved continuous pressure vacuum breaker. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. At the self service cold holing unit on sell floor, inspector observed smoked turkey legs stored directly below raw pork packages, pork belly stored directly above flank steak, Coaching and demonstration was conducted with PiC and entire meat department staff to follow the code compliance for packaging, segregation and protecting from cross contamination during storage at this section.
