Observed no outdoor cooking hold on their permit. Apply for a minor remodel permit for the outdoor cooking service. Please submit an application, supporting documentation, and fees within 5 business days or legal action may result pursuant to MCEHC Chapter 1, Regulation 4(e). Observed no hot water at several sinks in the hot deli area, but did work at 1 of the sinks. Other departments were ok and got hot water present. Talked to staff about water requirements. Ensure that there is 100F hot water present at all hand sinks at all times. Corrective Action: Correct prior to re-inspection. Send picture of obtained hot water within 10 days for re-inspection. Gave manager my card.

Returned to check hot holding temperatures in unit and reheated wings were correct but other pans of wings were now out of temp. Had PIC call for service of unit and reheat wings once more. Corrective Action: Corrected at time of inspection.
