Observed nacho cheese with an internal temperature range of 110F-112F in a hot holding unit. Per PIC, the nacho cheese has been hot holding for less than 2 hours. Had PIC turn the heat up on the hot holding unit. Commercially processed TCS food items must be rapidly reheated to 135°F within 2 hours prior to hot holding. Corrective Action: Corrected at time of inspection.

Priority Foundation-5-103.12, Pf: Pressure-- Observed very low pressure for the hot water faucet at the hand wash sink. As per employee, he wasn't sure how long the hot water faucet had low pressure, but hot water was coming from the 3 compartment sink. Explained to PIC, that the hot water faucet needs to be fixed to have adequate pressure to maintain at all fixtures including the capacity to provide hot water at peak hot water demand, that includes the hand sink. A re-inspection will be conducted on 10/17/2023 to show pressure is maintained at the hand wash sink. Correct By: Correct Prior To Reinspection
