Observed nacho cheese with an internal temperature range of 110F-112F in a hot holding unit. Per PIC, the nacho cheese has been hot holding for less than 2 hours. Had PIC turn the heat up on the hot holding unit. Commercially processed TCS food items must be rapidly reheated to 135°F within 2 hours prior to hot holding. Corrective Action: Corrected at time of inspection.
