Notes;Discussed time as control documentation. This kitchen is no longer reheating for hot holding or cooling. Their breakfast consists of bacon, sausage, eggs, potatoes, cereal, etc. All foods come in pre-cooked, reheated for breakfast, placed on time control, and discarded after breakfast (2.5 hours). They do not reheat to hot hold any dinner items. Only raw food is frozen burger patties that are cooked to order. All other foods for dinner menu are cooked/reheated per order. Per manager, no foods go through a cook, cool, reheat process. Permit Class has been changed to a class 3, 10+ E&D permit.
