The Chef instructed staff to use 3 compartment sink until repairs can be made. Discussed with Chef that the chemical dish machine should test between 50-100ppm with chlorine test strips. Food contact surfaces must be cleaned with proper concentration of sanitizer, 50-150ppm chlorine per the label. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Establishment will use kitchen warewashing machine to sanitize dishes until the bar warewashing station are repaired. Corrective Action: Corrected at time of inspection.

Observed salmon salad and sliced cheese in prep table top across from the burners with a temperature of 47°F and 45°F, respectively. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, foods had been in prep table top for an hour. PIC lowered dial on prep table and all TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

In salad table/51F, observed in-house prepared dressings holding over 41F including Caesar dressing (with egg)/49F, bleu cheese dressing/52F, ranch dressing/46F, and bleu cheese crumbles/49F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC voluntarily discarded the items held over night. TCS items that were just prepared were placed in an ice bath. The PIC adjusted the thermostat in the refrigerator and will monitor to ensure correct holding temperature is achieved. Corrective Action: Corrected at time of inspection.
