Discussed with the PIC to seal/paint wood to make it smooth and easily cleanable. PIC stated that the unit was recently replaced due to the last unit becoming in disrepair. Ensure that the unit is replaced with a NSF (ANSI) approved commercial unit. Corrective Action: Correct prior to next routine inspection.
