Observed multiple opened refrigerated containers after opening (plain, chipotle, and herb) mayonnaise and Caesar dressing without date marking. The establishment makes its own house-made Chipotle mayo and herb mayo. Staff stated all sauces were opened and prepared on Sunday. All RTE/TCS foods were properly date-marked at the time of inspection. RTE/TCS foods requiring date marking must be date-marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed rice hot holding at 115°F in a rice cooker. Staff stated the rice was cooked around an hour before temperature measurement. Improperly hot-held rice was reheated at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Discussed the use of the keep warm function on the rice cooker. Staff to routinely check hot holding foods to ensure they maintain hot holding temperatures of 135°F. or above. Corrective Action: Corrected at time of inspection.

Observed Munster cheese (50°F) and blue cheese (52°F) sitting above the covered wells in the top of the prep tables. An employee stated that the cheese had only been in top of the prep table for three hours. An employee moved the blue cheese to the bottom of the prep table and the Munster cheese to inside of one of the wells to cool. Time Temperature Control for Safety (TCS) food must be maintained at 41°F. Cold holing equipment to be used in accordance with manufacturing instructions. Discussed cold holding requirements.
