Observed a refrigerated preparation table front of house having an ambient temperature of 50°F measured with mid/max thermometer with TCS food items like sliced tofu (49°F) and cut lettuce (49°F). These food times were placed in cooler 3 hours ago per PIC. All Time Temperature Control for Safety (TCS) foods which had been in the unit for less than 4 hours were moved back to the main refrigerator back of house to rapidly cool. PIC will discontinue use of cold holding unit until able to maintain an ambient temperature of 41°F or below. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection

Observed raw in shell eggs above noodles in the door refrigerators located back of house on cook line. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed main dishwasher dispensing at 0 PPM of chlorine with a couple racks of dishes freshly washed. Alerted staff who serviced the machine and ran it a few additional times. Rechecked the sanitizer level (50 PPM) which then read in compliance between 50-100 PPM. Discussed the importance of routinely checking sanitizer levels. Observed rice scoops in water (62°F) sitting at room temperature. Staff stated they use ice in the water to maintain cold temperatures, but the ice had melted. This is not an approved method of keeping utensils. In-use utensils must be stored in a clean, dry location; in running water; in a cold holding prep-table, or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Core-3-304.12 , C: In-Use Utensils, Between-Use Storage Observed a rice scoop stored in room temperature water (72°F). Alerted the Person in Charge who washed, rinsed, and sanitized the rice scoop. Staff rearranged the wells in the prep table to accommodate the rice scoop in water, within the top of the unit, nearest the cooked rice. The dipper well faucet was already turned on. Proper storage of in-use utensils (used to serve Time Temperature Control foods) is to store utensils in either 41°F or below water, 135°F or hotter water, in dipper wells with running water, or stored dry/at room temp and changed every 4-hours.
