Observed two rice scoopers being set on the top of the rice cookers in-between uses. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. PIC stated that they will use a stainless steel square metal container in one of the steamers for storing in use utensils. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked chicken hot holding at 125°F in the steam table. Staff stated the chicken had been hot holding for less than 2 hours. Alerted manager who reheated the chicken to 165°F at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control, all TCS foods must be maintained at 135°F or above. Discussed the importance of adhering to the proper water fill lines on steam tables. Overfilling steam tables may result in food trays floating, causing the steam to escape. Discussed hot holding best practices and requirements with staff. Corrective Action: Corrected at time of inspection.

Observed sliced tomato (50°F), chopped lettuce (48°F), hummus (47°F), and raw meat (47°F) cold holding above 41°F. The prep table measured 47.6°F with the min/max thermometer. Staff had stocked the prep table upon opening (around 3 hours prior to temperature measurement). All Time-Temperature Control for Safety (TCS) foods in the lower compartments were moved to the walk-in at time of inspection and the foods on the top of the prep table were put in an ice bath. The prep table was also adjusted to a lower temperature. Discussed the importance of routinely checking cold-holding food temperatures throughout the day. Corrective Action: Corrected at time of inspection.

Observed the main prep table measuring 47.3°F with the min/max thermometer. TCS foods were moved to an alternative refrigerator or placed in an ice bath at time of inspection. The prep table was also adjusted to a cooler setting. The manager reached out to their third party to come out and fix the prep table. Staff to continue to use alternative refrigeration and an ice bath on the top of the prep table until the prep table is able to maintain at or below 41°F. A reinspection on the prep table will be conducted in 10 days unless electronically verified. Corrective Action: Correct prior to next routine inspection.
