Observed cooked and cooled red potatoes and hard boiled eggs stored beneath raw shrimp and crawfish in walk in cooler. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Ready to eat red potatoes and eggs were moved from beneath the shrimp and crawfish. Corrective Action: Corrected at time of inspection.

Observed cooked red potatoes in pot next to stove top to be 127*F. As per the person in charge the potatoes were cooked approximately 2 hours prior to the inspection and held on stove top, items were moved to clean a burner and not immediately replaced. Normal practice is to keep potatoes on stove top. Hot hold of food tp be 135*F or greater. Potatoes were quickly reheated to 165*F and held at 135*F. Advised staff to use their metal stem thermometers to verify food remains at 135*F or above. Correct By: Corrected At Time Of Inspection
