Inspector's notes

Observed pre-portioned deli meat (ham and turkey) in plastic deep tote in two door upright cooler at 45*F. Cold Hold to be at 41*F or lower. As per the person in charge items were assembled and portioned approximately 4 hours before the inspections. Person in charge discarded product. Advised staff to portion smaller amounts of product or chill on shallower metal baking sheet in walk in cooler. Corrective Action: Corrected at time of inspection.
