-- In the walk-in refrigerator, observed opened bag of chicken wings and prepped trays of wings without date mark labeling on them. In reach-in refrigerator for pizza prep line, observed sausage, ham, cheesesteak, and cheesy white sauce in containers without date mark labels on them. The PIC stated all items except the cheesy white sauce was opened 1 day ago. They were unsure when the cheesy sauce was opened. All RTE/TCS foods were properly date marked at the time of inspection, and the cheesy sauce was discarded. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Violation Item Name: Plumbing Installed; Proper Backflow Devices Code: 5-205.12 (A): Priority: Prohibiting a Cross Connection; Drinking Lines Inspector Notes & Corrective Actions: -- Observed mop faucet equipped with an atmospheric vacuum breaker (AVB) and a Y-valve attached supplying water to chemical dispenser. AVB is not designed for use in high health hazard applications (e.g. soaps, sprays, degreasers, chemicals, and similar contaminants), and shall not be used where subjected to continuous pressure on the backflow prevention device. Y-Valves, shut-off valves, devices or obstructions downstream (i.e. chemical dispenser, shut-off type spray nozzle, etc.) from faucet AVBs are not permitted, as this will result in continuous water pressure and failure of the backflow prevention device. Requested the PIC disconnect system from atmospheric vacuum breaker at time of inspection. Corrective Action: Corrected at time of inspection.

Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing.
